BTW, the 9063 is on the Sowter homepage as one of the transformers they are prioritising, not sure what that means but maybe they are still available.

Just one thing to consider from your post Max. *sn7 is not that far from a 5687 (lower transconductance, but not that big a deal in this case), so I would consider using that to drive that interstage as well. *bx7 is closer to a 5687, but don't rule the sn7 out. With a 1:1 transformer, you can also do the GEC trick of adding coupling capacitors from input to output. Why bother? Because it can tame the transformer's HF resonance but you still have the advantage of large voltage swing.

The problem with bifilar choke is that you are adding capacitance coupling voltage between the two anodes, what you want with a push pull stage is coupling the current between the anodes (but in reverse).
Also using bifilar chokes would limit the differential voltage swing on the two windings to ...
